Chickpea Cookie Dough

“Healthy” desserts seem to be all the rage right now, and we are not ones to shy away from treats. One of our favorite treats of all time is cookie dough—nothing satisfies quite like it. This Chickpea Cookie Dough recipe is incredible, we promise!

For this recipe, our key ingredient is: Chickpeas

Here’s why we care about this recipe:

  • A dessert that serves as a weight management tool? By golly, sign us up. Research shows that chickpeas actually help with weight management. Since it is a high fiber ingredient, it helps you feel more full and delays digestion.
  • Chickpeas are not only rich in proteins and fiber, but iron, Vitamins A, E and C, and anti-inflammatory properties.
  • They are low glycemic index, meaning your body will absorb these more slowly. Ultimately, this means that you will avoid a spike in insulin level,  making them a beneficial carbohydrate.
  • Research suggests that chickpeas may play a beneficial role in weight management and glucose and insulin regulation, as well as have a positive impact on some markets of cardiovascular disease.
  • Chickpeas are also chalk full of protein, meaning you will feel full faster, and also contributes to muscle growth. These protein packed treats make for a perfect post workout treat for this reason.
  • Struggling to hit your iron and zinc intake? Look no further than chickpeas, as they also have high amounts of both, as well as other vitamins and minerals.

Holy amaze balls!! Just made a batch and I don’t know how I’m going to control myself.. These are so good! I play a lot in the healthy treats area and have not heard of a recipe with chickpeas. I can’t believe how much like cookie dough it tastes and looks. And you don’t have to wait for them to bake. 😉
