Salted Caramel Apple Bars

Can you believe November is already upon us? We are in the thick of fall, people. While Christmas time may be right around the corner, we are still not done with all the flavors that fall has to offer us! We are kicking the month off with our homemade Salted Caramel Apple Bars. This recipe is a perfect ‘healthier alternative’ option for anyone looking to cut down on refined sugar while still treating yourself to something delicious. Not to mention, our stomachs are thrilled since these are gluten free and dairy free, while simultaneously tasting like heaven. No seriously– we made three batches this week alone.

Salted Caramel Apple Bars

INGREDIENTS

For the crust

  • 2 cups almond flour
  • 2 tablespoons coconut flour
  • ⅓ cup coconut oil, melted
  • ⅓ cup maple syrup
  • ½ teaspoon salt

For the apple filling

For the crumb topping

  • ¼ of the crust mixture
  • ½ cup chopped pecans
  • ¼ teaspoon cinnamon

DIRECTIONS

  1. *For this recipe, we recommend making Rachael DeVaux’s salted caramel mixture prior to making the bars. For a simpler recipe, you can replace with store bought caramel topping.
  2. Preheat oven to 350° and line a 8×8 inch pan with parchment paper.
  3. In a large bowl, make the crust. Combine the almond flour, coconut flour, coconut oil, maple syrup, and salt. Mix until well combined. Press ¾ of crust mixture into the bottom of the pan and save the remaining ¼ in a small bowl for the topping.
  4. Bake crust for 13-15 minutes or until edges are lightly browned.
  5. While crust is baking, prepare crumb topping. Mix together remaining crust mixture with pecans and cinnamon until combined.
  6. When crust is done baking, remove and let cool for 5 minutes. Then evenly sprinkle apple over crust and pour caramel sauce over apple.
  7. Sprinkle crust mixture on top of apple filling and press down slightly so it stays in place.
  8. Bake for 20-25 minutes.
