Egg White Cups

To be perfectly clear, our lives are really not THAT busy. We do not have children, we aren’t married, we do not have a second job, and we do not have a ton of obligations outside of work, A Healthy Hint and our social lives. However, we are still people who love to maximize our time, and one of the best ways we know how to do that is by meal prepping our food every week. We usually prep our lunches and dinners, but we have found we can take this life hack a step further and meal prep our breaksfast, too. We want to share a few ideas with you on these easy yet delicious Egg White Bites. 

Meal prepping has simplified our lives in a number of ways, since we no longer have to carve out time every day to cook our food. We also have found that we are able to save a great deal of money every week while still eating delicious and healthy meals through prepping our food ahead of time. Breakfast prep is just one more additional way to make our lives a little less stressful. Our favorite go-to breakfast is the Starbucks inspired Egg White Cups, with turkey bacon and roasted red peppers.

We wanted to provide a few other ideas to you, too, since these on the go cups are so easy. You don’t have to worry about getting sick of eating the same thing every week with so many options as a mix in. Keep in mind you can make this recipe with the entire egg instead of egg whites only as well. The possibilites are endless, but here are ten of our ideas to get you started:

  • Cheddar cheese and diced ham
  • Broccoli and mushrooms
  • Red, orange and green diced bell peppers
  • Onions and sweet potatoes
  • Chicken apple sausage
  • Prosciutto and asparagus
  • Spinach and mushrooms
  • Butternut squash and zucchini
  • Spiralized carrots and red pepper flakes
  • Black beans, corn and hot sauce

Egg White Cups with Turkey Bacon and Roasted Red Peppers

INGREDIENTS

  • 12 ounces (12 slices) turkey bacon
  • 2 cups egg whites
  • ⅓  cup cottage cheese
  • ¼ cup feta cheese
  • ¼ cup monterey jack cheese
  • Salt, to taste
  • Pepper, to taste
  • ½  cup roasted red peppers, diced

DIRECTIONS

  1. Preheat oven to 400 degrees. Spray 12 muffin tins with non-stick baking spray, set aside.
  2. Once oven is preheated, place turkey bacon on a baking sheet and bake for 10 minutes. At this point turkey bacon will be half cooked. Cool for 10 minutes.
  3. While turkey bacon is cooling, in a food processor, blend together egg whites, cottage cheese, feta cheese, monterey jack cheese, salt and pepper, to taste.
  4. In each muffin tin, form a circle with turkey bacon around the edge of the tin.
  5. Evenly divide and pour egg mixture into turkey bacon lined muffin tins. Top with diced roasted red peppers.
  6. Bake for 15-17 minutes or until firm and not runny.
