Healthier Peanut Butter Blossoms

This little sugar nugget is essentially THE go-to Christmas cookie in our homes. There is something a little nostalgic about a peanut butter blossom, and unless you have a peanut allergy (truly, so sorry if that is you…) these are a dessert home run. Does anyone else have memories of being the designated Hersey’s kiss element to the assembly line for this cookie growing up? We sure do. This recipe does not have a key ingredient since they are just a plain ol’ delicious treat, but we did make some tweaks to ensure this recipe is slightly healthier than a traditional peanut butter blossom.

Healthier Peanut Butter Blossoms

INGREDIENTS

For dough:

  • ½ cup unsalted butter, softened
  • ¾ cup peanut butter (natural, no sugar added)
  • ¼ cup coconut sugar
  • ¼ cup coconut brown sugar
  • 1 egg
  • 2 tablespoons unsweetened almond milk
  • 1 teaspoon vanilla
  • 1 cup gluten free all-purpose flour*
  • ¾ cup almond flour*
  • 1 teaspoon baking powder
  • ½ teaspoon salt

For rolling/topping:

  • ¼ cup granulated sugar
  • 48 Hershey Kisses (and maybe like…8-12 more so you can sample them with each batch)

*If you don’t have these flours or prefer baking with regular flour, feel free to sub these flours with 1 ¾ cups all-purpose wheat flour.

DIRECTIONS

  1. Preheat oven to 375 degrees, remove kisses from their wrappers.
  2. In a mixer, cream together butter, peanut butter, coconut sugar and coconut brown sugar until well blended. Add egg, almond milk and vanilla.
  3. In a separate bowl, stir together flours, baking powder and salt. Gradually add this mixture into the peanut butter mixture.
  4. Shape dough into 1-inch balls. Roll in granulated sugar and place on ungreased cookie sheet.
  5. Bake 8-10 minutes or until lightly browned. Immediately press a kiss into the center of each cookie. Cool completely.
