Delta Dessert (aka Mint Chip Ice Cream Cookie Bars)

Christina wrote this post for a sorority newsletter as an ode to one of their famous desserts! This sweet treat ended up being so delicious that we had to share it with the rest of the world! Enjoy everything that is Delta Dessert (aka Mint Chip Ice Cream Cookie Bars).

Let’s go back to Monday nights in the Tri Delta house. The Monday nights that involved lining the hallway for dinner, dressing up in formal attire and eating exploding chicken while guests came through and made chapter announcements. When you think about these nights and about what the best ones consisted of, you probably think of one thing. If your mind goes directly to fraternity serenades, you are sadly mistaken. Might I remind you of a little something called Delta Dessert… Anytime that halfway melted green piece of pie came out of the kitchen after our hashers picked up our dinner plates, it was a sign that it was going to be a good week! The best nights were the ones when there were leftovers so we could sneak an extra piece after a four hour night of standards.

A sister friend of mine requested that I recreate this delicious dessert and I was more than happy to do so. I took the original recipe (or at least what I believed to be the original recipe) and added A Healthy Hint (or two) to it in order to make it a less guilty dessert while tending to all my gluten and dairy free friends! This recipe is so easy and a real crowd pleaser!

Delta Dessert (aka Mint Chip Ice Cream Cookie Bars)

INGREDIENTS

  • 16 gluten free chocolate vanilla creme cookies
  • 3 ¼ tablespoons coconut oil, melted and divided
  • 4 cups dairy free mint chip ice cream (We recommend Cado Avocado Ice Cream!)
  • 2 tablespoons dairy free dark chocolate chips

DIRECTIONS

  1. In a food processor, pulse gluten free chocolate vanilla creme cookies until finely ground. Add in 3 tablespoons of melted coconut oil and pulse until fully combined.
  2. Take cookie mixture and press firmly onto the bottom of a parchment lined 8-inch square pan. Freeze for at least 30 minutes for crust to set.
  3. While crust is setting, take ice cream out of the freezer to soften. Depending on the type of ice cream, it should take 20-40 minutes.
  4. When crust is set, spread the softened ice cream on top of it.
  5. Melt together chocolate chips and ¼ tablespoon coconut oil. Drizzle this mixture over the top of the ice cream. Freeze for at least an hour before serving. Enjoy!
