Slow Cooker Chipotle Shredded Chicken

Here’s a little brain teaser for you: what are two things we love deary and do everything in our power to seek? Convenience, and chipotle sauce. Seriously, we are all about convenient recipes. Having easy recipes ensures we can constantly switch up our meal prep, yet ensures we actually stick to a healthy eating routine. As an added bonus, we love when something is versatile, so we do not get tired of eating it throughout the week.

Slow Cooker Chipotle Shredded Chicken

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 small onion, chopped
  • 4 garlic cloves, minced
  • 14.5 oz canned crushed tomatoes
  • 1-3 chipotle peppers, chopped, from a can of chipotles in adobo (depending on how spicy you like it)
  • 2 tablespoons adobo sauce, from a can of chipotles in adobo
  • 1 tablespoon chili powder
  • 2 teaspoons dried oregano
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • In a slow cooker, combine chicken, chopped onion, minced garlic, crushed tomatoes, chipotle peppers, adobo sauce, chili powder, oregano, onion powder, garlic powder, salt and pepper. Mix well.
  • Cover and cook on low for 5-7 hours, or until chicken is fully cooked and can easily be shredded.
  • Remove chicken from slow cooker and shred with two forks. Place shredded chicken back into slow cooker and mix in with sauce.
  • Serve immediately or keep slow cooker on warm until ready to eat. We used Siete tortillas and rolled the meat up into a little piece of heaven!
