Lemon Blueberry Loaf

What is it about a warm, moist (sorry, sensitive readers) loaf in the morning that just screams comfort? When it is packed with juicy blueberries and lemon zest, it is game over. It is perfection. Seriously, trust us, we are amateur food bloggers. This recipe is so easy, and we cannot seem to stop making it! Is making it three times in one week excessive? Here’s why we care about this recipe:

  • Starting with the basics, but blueberries are packed with antioxidants. They are recognized as having one of the highest antioxidant levels of any fruit. What does this mean? Why do we care? Antioxidants protect our bodies against diseases and age related health declines. There are also studies which link antioxidants in blueberries to reverse signs of aging in our brains.
  • On the subject of brain boosting, blueberries are also linked to over brain health. They improve memory, and protect our brains against damaging free radicals.
  • Blueberries also are a fruit that has a lower glycemic index rating. This is important for people with diabetes, as it means they will not cause a spike in our blood sugar levels.
  • Over 30% of deaths in the US are directly linked to heart issues. Fortunately, blueberries improve artery health and blood flow, both of which increase overall heart health.

Paleo Lemon Blueberry Loaf

INGREDIENTS

  • 2 cups almond flour
  • ¼ cup coconut flour
  • 1 teaspoons baking soda
  • ¼ teaspoon salt
  • 3 eggs
  • ¼ cup coconut sugar
  • 2 tablespoons honey
  • ¼ cup coconut oil, melted
  • ½ teaspoon vanilla
  • Zest of 1 lemon
  • 2 tablespoons lemon juice (approximately 1 lemon)
  • 1 cup fresh blueberries (dusted with 1 teaspoon gluten free all-purpose flour*)

*Optional but by dusting the blueberries with flour, this ensures they do not sink to the bottom of the pan while baking. Use regular all-purpose flour if gluten is not an issue. We realize that doing this makes the recipe no longer paleo so if that matters to you, you can omit this step.

DIRECTIONS

  1. Preheat oven to 350 degrees. Prepare a loaf pan with parchment paper or spray with nonstick cooking spray.
  2. In a large bowl, whisk together almond flour, coconut flour, baking soda and salt.
  3. In a separate large bowl, whisk together eggs, coconut sugar, honey, coconut oil, vanilla, lemon zest and lemon juice. Add dry ingredients to wet ingredients and mix well to combine. Lastly, fold in flour-dusted blueberries.
  4. Pour batter into prepared loaf pan and spread out evenly. Bake for 20 minutes uncovered and then cover with foil, to prevent browning too quickly and bake for an additional 20-30 minutes or until toothpick comes out clean. Allow to cool for about 20 minutes in the loaf pan and then carefully remove from pan and transfer to a wire rack to cool completely.
