We have you covered with this Oatmeal Blueberry Cookie recipe. 3/4 heaven, 1/4 blueberry (Not the real recipe, interestingly enough. You will have to read below for the real thing…)

Oatmeal Blueberry Cookies
Equipment
- Medium mixing bowl
- large mixing bowl
- baking sheet
Ingredients
- 1/2 cup oat flour
- 1/2 cup almond flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1/3 cup coconut oil (melted)
- 1/3 cup maple syrup
- 2 tablespoons coconut brown sugar
- 2 eggs
- 1 tablespoon vanilla
- 2 cups rolled oats
- 1 cup dried blueberries
Instructions
- Preheat oven to 350 degrees. Prepare a baking sheet with parchment paper or a silicon baking mat.
- In a medium bowl add the oat flour, almond flour, baking soda, baking powder, salt and cinnamon, stir to mix and combine. Set aside.
- In a large bowl add coconut oil, maple syrup, brown sugar and whisk well to combine. Whisk in eggs and vanilla.
- Slowly add the dry mixture to the wet mixture and mix until just combined (do not over mix).
- Fold in the oats and blueberries until well combined.
- Scoop rounded tablespoon cookies onto prepared cookie sheet leaving 2 inches in between.
- Bake for 10-12 minutes or until edges are golden brown.
