Oatmeal Blueberry Cookies

Can cookie recipes EVER get old? No. The answer is no, always. But what’s a gal to do when she wants an Oatmeal Raisin Cookie but hates raisins? Oatmeal Blueberry Cookies

Servings: 18
Calories: 100kcal

Ingredients

  • 1/2 cup oat flour
  • 1/2 cup almond flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/3 cup coconut oil (melted)
  • 1/3 cup maple syrup
  • 2 tablespoons coconut brown sugar
  • 2 eggs
  • 1 tablespoon vanilla
  • 2 cups rolled oats
  • 1 cup dried blueberries

Instructions

  • Preheat oven to 350 degrees. Prepare a baking sheet with parchment paper or a silicon baking mat.
  • In a medium bowl add the oat flour, almond flour, baking soda, baking powder, salt and cinnamon, stir to mix and combine. Set aside.
  • In a large bowl add coconut oil, maple syrup, brown sugar and whisk well to combine. Whisk in eggs and vanilla.
  • Slowly add the dry mixture to the wet mixture and mix until just combined (do not over mix).
  • Fold in the oats and blueberries until well combined.
  • Scoop rounded tablespoon cookies onto prepared cookie sheet leaving 2 inches in between.
  • Bake for 10-12 minutes or until edges are golden brown.
