Paleo Peanut Butter Chocolate Chip Blondies

Wait…. Shh… Did you hear that? The sound of an angelic choir in the distance? You’re not crazy, we heard it too, the second we hit publish on this recipe. Rejoice, friends! These Paleo Peanut Butter Chocolate Chip Blondies are a culinary gift from the heavens.

Paleo Peanut Butter Chocolate Chip Blondies

  • 2 eggs
  • 2/3 cup coconut sugar
  • 1/2 cup + 2 tablespoons nut butter, crunchy or smooth (We recommend NuttZo Peanut Pro)
  • 1/4 cup coconut oil, softened
  • 2 teaspoons vanilla
  • 1 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips (we love Lily’s)


  • Preheat oven to 350 degrees F. Line an 8×8 inch baking pan with parchment paper or spray with nonstick cooking spray to prevent sticking. Set aside.
  • In a large bowl, mix together the eggs, coconut sugar, ½ cup of nut butter, coconut oil and vanilla until smooth.
  • Next add the almond flour, coconut flour, baking soda and salt. Mix until a cookie dough consistency forms, then fold in the chocolate chips.
  • Add the batter to the prepared pan and spread evenly. Dollop remaining (2 tablespoons) nut butter over dough. Feel free to spread it a little so it’s a more evenly dispersed. 
  • Bake for 22-27 minutes until edges are just slightly golden.
