Isn’t it weird to think about pairing vegetables with dessert? This sneaky little recipe will ensure you are not only getting your sweet tooth fix, but getting in your greens as well! As an added bonus, its gluten free (of course!) and paleo. And delicious.


Paleo Zucchini Chocolate Chip Bread
Equipment
- Medium mixing bowl
- loaf pan
Ingredients
- 3 eggs
- 1/3 cup maple syrup
- 1/4 cup coconut oil, softened
- 1 teaspoon vanilla
- 1 1/2 cup almond flour
- 1 1/2 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup shredded zucchini that has been squeezed of excess moisture (approximately 1 medium zucchini)
- 1/2 cup chocolate chips (we love using Lily’s!)
- 1/2 cup chopped walnuts
Instructions
- Preheat oven to 350 degrees and grease a loaf pan well or line with parchment paper.
- Whisk together eggs, maple syrup, coconut oil and vanilla.
- Mix in the almond flour, cinnamon, baking soda, baking powder and salt until evenly combined.
- Fold in the zucchini, chocolate chips and walnuts.
- Bake for 45-50 minutes.
