Do you know when the appropriate time of day to eat pancakes is? Trick question. ANY time of day- breakfast, lunch or dinner. We have these on repeat here in Arizona, trying to channel our inner fall spirit. We hope you love them as much as we do! They are fluffy, flavorful and so satisfying.




Single Serving Paleo Pumpkin Pancakes
Equipment
- Small mixing bowl
- Medium skillet
Ingredients
- 1/3 cup Birch Benders Paleo Pancake & Waffle Mix
- 1/2 teaspoon pumpkin pie spice
- 1/2 teaspoon cinnamon
- 2 tablespoons pumpkin puree
- 1/2 teaspoon vanilla
- 3 egg whites
- 3 tablespoons almond milk
Instructions
- In a small bowl, whisk together Birch Benders Paleo Pancake & Waffle Mix, pumpkin pie spice and cinnamon until fully combined. Add in pumpkin puree, vanilla, egg whites and almond milk. Whisk until smooth.
- Heat a medium skillet to medium heat and spray pan with non-stick cooking spray. Once the skillet is hot, spoon ¼ of the batter onto the skillet and use your spoon to spread the batter so that everything is even.
- Cook the first side for about 3 minutes or until cooked enough to flip. Once flipped, cook the other side for 2-3 minutes or until cooked all the way through.
