Want to know a secret? We rarely buy granola because we have zero self control. Zero. We start with a modest sprinkle for added crunch, then usually double that sprinkle, then generously triple it. Do we stop there? Nah. Then we have to pop a few pieces into our mouths to ‘taste test’, and are finally end up shoving it directly into our mouths by the fist-full like movie theater popcorn. No shame, guys. Suddenly, in a day or two, the entire Costco-sized bag intended for a family is gone and the sadness sits in because we are out of granola and it was supposed to last a week or two. A vicious cycle, as this happens every single time. Fair warning: this recipe is going to make you do the same, because it is so delicious.
Granola is a wonderful snack, and is great as a standalone or add on to most things we make for breakfast. This particular granola has a sweet flavor, and a wonderful crunch factor. It is a great fall recipe, as the pumpkin seeds are a seasonal favorite, but this can truly be made any time of year!



Nutty Paleo Granola
Ingredients
- 1 cup almonds
- 1 cup pecans
- 1 cup cashews
- 1/2 cup pumpkin seeds
- 1/2 cup sunflower seeds
- 1/2 cup unsweetened coconut flakes
- 1/3 cup coconut oil melted
- 1/3 cup maple syrup
- 1 tsp vanilla extract
- 1 tsp salt
- 1 tsp cinnamon
Instructions
- Preheat oven to 325° and prepare a baking sheet with parchment paper or nonstick cooking spray.
- In a food processor, pulse together almonds, pecans, cashews, pumpkin seeds and sunflower seeds a few times, enough to chop just slightly. Stir in coconut flakes.
- In a small bowl, whisk together coconut oil, maple syrup, vanilla, salt and cinnamon.
- Pour wet mixture over nuts and seeds and toss to coat. Spread granola on prepared baking sheet in an even layer.
- Bake for 20-25 minutes or until golden and nuts are toasted.
- Let cool completely on baking sheet before storing in an airtight container.
