6-Ingredient Almond Butter Chocolate Chip Cookies

What do you make your sweetheart when you are short on time the day before Valentine’s Day, and may feel a little too lazy to run to the store? What do you make yourself when you feel like treating yourself, because you are a glorious angel princess saint deserving of all the delicious things? These cookies, of course. You should have these 6 ingredients in your kitchen, so not only are we saving you a trip to the store, we are helping you or someone your love’s taste buds have a mouth party. Time to celebrate, bake, and fall in love!!!….with a cookie.

Some gluten free recipes give us a little anxiety, because there are so many random ingredients needed in order to make them. Arrowroot starch? Where do I go to buy that? Xanthan Gum? What even is that? This is not a knock on gluten free blogs, but sometimes, we just want to crank out something delicious without running to four grocery stores and our mom’s house. We love recipes that are fast, easy and delicious, and this one checks all 3 boxes.

6-Ingredient Almond Butter Chocolate Chip Cookies

You will have everything you need to make these cookies at home!

  • 1 cup creamy salted no sugar added almond butter
  • 1/2 cup coconut sugar
  • 1 egg
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1/2 cup chocolate chips


  • Preheat oven to 350°F. Prepare a baking sheet with parchment paper or a silicone baking mat and set aside.
  • In a large mixing bowl, add the almond butter, coconut sugar, egg, vanilla extract, and baking soda and mix together until very well combined. Add in the chocolate chips and continue mixing until fully combined.
  • Spoon cookie dough onto the prepared baking sheets and flatten slightly.
  • Bake for 9-11 minutes or until the cookies are set. Remove from the oven and allow the cookies to cool completely on a baking sheet.
