Healthy Cookie Dough Bars are not only easy, but they are a freezer staple! We actually prefer these in the freezer. The taste is so delicious, and a true win win- they take longer to eat so you can savor them. A true win-win. Personally, we love keeping little treats in the freezer at all times. We have the worst sweet tooth, ever and have this urge to always grab a little sugar after a meal. Despite doing our best to eat clean, we have a vice. Copycat Reese’s Truffles, anyone?
We have found that having healthy and homemade sweets is so much easier than having Reese’s or bags of Sour Patch Kids on hand. This helps us eliminate refined sugars from our diets more effectively. It also helps us always be aware of what we are putting into our bodies.









Healthy Cookie Dough Bars
Equipment
- 8×8 pan
Ingredients
For Cookie Dough Layer
- 1 cup no sugar added salted peanut butter
- 1/4 cup maple syrup
- 2 tablespoons coconut oil, melted
- 2 teaspoons vanilla
- 1 1/4 cup oat flour
- 1/2 cup chocolate chips
For Chocolate Layer
- 1/2 cup chocolate chips
- 1/3 cup no sugar added salted peanut butter
- 1 tablespoon coconut oil
- flakey sea salt
Instructions
- Prepare an 8×8 pan with parchment paper or nonstick baking spray.
- Begin with cookie dough layer: In a large bowl, mix together peanut butter, maple syrup, coconut oil, vanilla, and oat flour. Fold in chocolate chips.
- Press down the cookie dough layer into the prepared pan.
- For the chocolate layer: In a microwave-safe bowl, melt chocolate chips, peanut butter and coconut oil in 30 second increments until fully melted.
- Pour chocolate on top of cookie dough layer.
- Place in freezer for at least one hour, sprinkle flakey sea salt on top, and then cut into bars.
- Store in fridge or freezer.
