Gluten Free Samoa Bars

We hope social distancing has allowed you to try many new things, and you are able to create, relax, and get in some baking time as well. One thing we LOVE is cookies, any kind really. We are open minded women when it comes to desserts and will pretty much eat anything, but our love for cookies rises above all other desserts. We especially love Girl Scout cookies. Yes- everything we are saying is obvious, but facts are facts. Hopefully that means you agree with us and will try this easy, healthy and delicious recipe: Gluten Free Samoa Bars!

Girl Scout Cookies represent so much to us, as we were both Girl Scouts! Christina was even a troop leader, as she is a noble, beautiful, confident earth angel, capable of molding the minds of our youth. We struggled with not being able to enjoy Girl Scout Cookies when we became gluten free, because our favorites were all packed with gluten. While they do have some gluten free options available, we missed the classics!

One amazing thing about being gluten free in today’s day and age is the access to so many alternatives. We are not limited now because we are gluten free- we just have to make our own version of something we love! This is a win-win, because we can usually tweak it to be as healthy (or unhealthy if we so choose!) as we would like.

Samoas are in our top two favorite Girl Scout cookies. Obviously, thin mints are the other favorite- frozen of course. We love everything about them, minus all the wonky artificial ingredients. Most of these ingredients are things we cannot pronounce and it definitely disturbed us. We created this healthy, gluten free Samoa cookie instead with only six ingredients between the two layers, plus a little chocolate on top.

  • 8×8 pan


For the Shortbread Crust

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/3 cup coconut oil, melted
  • 1/4 cup maple syrup

For the Coconut Layer

  • 2 cups medjool dates, pitted
  • 2 cups unsweetened coconut threads (or shredded coconut)

For the Chocolate Drizzle

  • 1/2 cup chocolate chips
  • 1 teaspoon coconut oil


  • Preheat your oven to 350F. Prepare an 8×8 inch pan with parchment paper or non-stick baking spray. 
  • Prepare the shortbread crust: In a bowl, mix together almond flour, coconut flour, coconut oil and maple syrup until fully combined. Press shortbread dough into the prepared pan. Bake for 8-10 minutes or until edges begin to brown. Once baked, cool completely. 
  • Once the shortbread crust is cooled, prepare the coconut layer: In a food processor, combine dates and coconut. Pulse until mixture is combined and starts to form a ball of dough. 
  • Layer coconut layer on top of shortbread crust. Press it firmly into the pan. 
  • Prepare the chocolate drizzle: In a microwave safe bowl, combine chocolate chips and coconut oil. Microwave in intervals, stirring every 30 seconds, until fully melted.
  • At this point, you can drizzle directly on top of the coconut layer while it’s still in the pan or you can cut the bars into squares and remove from the pan and then drizzle each square individually (allowing chocolate to drip over the edges). Both options result in the same delicious bar so it is totally up to you!
