A HAPPY Friday to all our internet friends. Do you know what a silver lining is to the quarantine? Having extra time to make breakfast, or eat breakfast in general! Another thing we love here in Arizona is green chili, which are a New Mexican chili. It is a little sweet, a little smokey, and so delicious. Tamales, enchiladas, chili verde beef…. The delicious taste of green chili knows no end. We can’t get enough, and love the flavor it adds to eggs in particular. These Green Chili Egg Cups are a perfect make ahead breakfast or snack.
Do you ever prep breakfast? Do you even EAT breakfast? We … never skip it. We are morning workout people now (I know, we have no life) and that means we need a big breakfast to recover from the workout. We always try to focus on high protein meals and snacks, but especially rely on a high protein breakfast to feed and grow our muscles.
Eggs are a perfect way to sneak in protein. We are a big fan of egg whites, but will eat an egg in nearly any form. Do you remember the Green Chili Quiche recipe we did, which had a sweet potato crust? Not that we expect you to remember every recipe ever… BUT — this recipe is a personal favorite, and a perfect “weekend breakfast”. Green Chili Egg Cups
Equipment
- muffin pan
Ingredients
- 3 eggs
- 12 oz egg whites
- 1/3 cup cottage cheese (we like using low fat cottage cheese)
- 1/2 cup shredded pepper jack cheese
- 1/2 yellow onion, diced
- 4 oz canned green chilies
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Preheat oven to 400 degrees. Spray 12 muffin tins with non-stick baking spray, set aside.
- In a food processor or blender, blend together eggs, egg whites and cottage cheese until completely smooth. Stir in cheese, onion, green chilies, salt and pepper.
- Evenly divide and pour egg mixture into prepared muffin tins.
- Bake for 15-17 minutes or until firm and not runny.
