We have made the shift from binge baking loaves of banana bread to now binge baking muffins. A plain blueberry muffin is amazing of course, but we felt we needed to level it up, and these Blueberry Muffins with Cinnamon Crumb Topping were born. These muffins are gluten free, as always, and the cinnamon crumb topping is to die for. These are the perfect muffin to enjoy with a cup of coffee, or when you have a big package of blueberries that you need to use up before they expire! We got you. Blueberry Muffins with Cinnamon Crumb Topping

A gluten free and paleo muffin packed with blueberry and sweetened with cinnamon!

Ingredients
  

For the muffins:

  • 1 1/4 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup tapioca flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 eggs
  • 1/4 cup coconut oil, melted and cooled
  • 1/3 cup coconut sugar
  • 1/3 cup almond milk
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla
  • 1 cup fresh blueberries dusted with 1 teaspoon gluten free all-purpose flour or tapioca flour*)

For the crumb topping:

  • 1/3 cup almond flour
  • 2 tablespoons coconut oil, solid
  • 1/4 cup coconut sugar
  • 1 teaspoon cinnamon

Instructions
 

  • Preheat the oven to 350 degrees. Prepare a 12-cup muffin tin with liners or spray with nonstick baking spray.
  • First, prepare crumb topping. In a small bowl, mix together all crumb topping ingredients with a fork. Set aside. 
  • In a medium bowl, mix together almond flour, coconut flour, tapioca flour, cinnamon, baking soda and salt until fully combined. 
  • In a separate large bowl, whisk together eggs, coconut oil, almond milk, coconut sugar, lemon juice and vanilla. 
  • Add dry ingredients to wet ingredients and mix until just combined. Gently fold in blueberries. 
  • Spoon mixture into prepared muffin pan and sprinkle crumb topping over muffins.
  • Bake muffins for 20-25 minutes or until a toothpick comes out clean when inserted.
