Banana Pancake Mix Muffins, Paleo and Gluten Free

What do you get when you combine a muffin with a pancake? This is not a joke prompt, nor a rhetorical question. You get a delicious little baked good that will disappear in 12 seconds if you are not careful and forget to chew. These pancake mix muffins are paleo, gluten free and SO delicious! Banana Pancake Mix Muffins are a perfect muffin when you are craving something sweet and delicious with a fluffy texture!

For this recipe, we used Birch Bender’s Banana Paleo Pancake Mix, to give these muffins some extra banana flavor and we have no regrets about this. No, this is not a sponsored post (we wish!!) – we just really love these pancake mixes! When you are buying a Birch Bender’s mix, make sure it is marked gluten free if you are gluten intolerant. Not all of their mixes are gluten free, and it would be a damn shame to bake something delicious to realize only later you cannot eat it. YIKES.

These muffins are a great baked good when you are out of flour! Or have 40 spare bananas on hand and are tired of making Banana Bread for the 18th time in the last few weeks. Not that that could ever happen, honestly. We have had trouble finding flour sometimes in grocery stores, since everyone is baking, and wanted to make due with items in the pantry already. This particular pancake mix we used uses a blend of cassava starch, almond flour and coconut flour. This means that it is not only totally gluten free, but paleo as well!

  • Muffin tin
  • large mixing bowl


  • 2 cups banana pancake mix We used Birch Bender's, but any pancake mix you have on hand will work !
  • 1 cup almond milk
  • 1 egg
  • 2 ripe bananas
  • 1/4 cup coconut sugar
  • 2 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt
  • 1/3 cup chocolate chips we used Lily's Chocolate Chips!


  • Preheat oven to 350 degrees. Line a muffin pan with liners, or thoroughly grease the inside cups.
  • In a large bowl, mash bananas, whisk in the egg, and add in all other ingredients. Blend until mixture is smooth. Stir in chocolate chips, and scoop into muffin pan. Each cup will be nearly full.
  • Bake for 23-25 minutes, until a toothpick comes out clean. Transfer to a wire rack to cool, and enjoy!
