Gluten Free Copycat Nestle Toll House Chocolate Chip Cookies

We needed a gluten free alternative of course, because there is something so nostalgic and familiar about this classic taste! These Gluten Free Copycat Nestle Toll House Chocolate Chip Cookies are honestly one of our all time favorite recipes, and we cannot wait to hear how you like them!

Our all time favorite food is a chocolate chip cookie. Seriously. There is not anything more delicious, satisfying, or comforting than a homemade, freshly baked chocolate chip cookie. We have no self control when it comes to cookies but who cares?

Gluten Free Copycat Nestle Toll House Chocolate Chip Cookies

Life is all about balance, which is obviously why we will be making these Gluten Free Copycat Nestle Toll House Chocolate Chip Cookies at least once a week here on out. If you are a fan of the original Nestle Chocolate Chip Cookie yet sadly cannot eat gluten, we have you covered.

One of our first recipes on A Healthy Hint was our Chickpea Cookie Dough, which still remains one of our favorite recipes! But nothing beats a homemade chocolate chip cookie, and it was high time we made one. We are very excited about this recipe, considering it is one of our favorite foods ever.

The dough alone may be impossible to not finish in one sitting, but if you make it to the cookie part, these little babies will be gone in 48 hours! These cookies also freeze very well, if you are trying to practice self control and do not want to eat them all in a singe sitting.

Gluten Free Copycat Nestle Toll House Chocolate Chip Cookies

Servings 4 Dozen

Ingredients
  

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 cup dark brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups + 2 tablespoons all-purpose gluten free flour
  • 1 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cup semi-sweet chocolate chips

Instructions
 

  • In a large mixing bowl, preferably with an electric mixer, beat together butter, sugar, brown sugar and vanilla until well combined. Add eggs one at a time, mixing after each addition.
  • Slowly add in the flour, baking soda and salt. Mix to combine. Add in chocolate chips.
  • Cover dough and refrigerate for at least one hour.
  • When ready to bake, preheat the oven to 375 degrees and prepare a baking sheet with parchment paper or a silicon liner. Scoop dough into rounded tablespoons and place onto the prepared baking sheet. Bake for 8-10 minutes or until golden brown. Cool completely on cooling racks and enjoy!
