During quarantine, we made banana bread every week. I think that was food blogger tip 101 for getting through those first few weeks. It was comforting, it was delicious, and never once did it get old. During our weekly banana mashing, we decided that it may be time to spice things up a bit, and behold: Double Chocolate Banana Bread was born. This recipe satisfies the sweet tooth and also has the classic comforts of a banana bread loaf!

Our classic gluten free Banana Bread still holds the top spot in our hearts, because nothing really beats the original, but this Double Chocolate Banana Bread recipe is a close second! The texture is insanely moist, fudgey and still packs a huge banana flavor.
We are still kind of in lock down here in Arizona, as the COVID cases keep ticking upwards. We are having our groceries delivered every week, and getting used to this new normal. One thing that helps us maintain a feeling of normalcy is baking. It serves as a great disconnect, and having a baked good around the house whenever a craving hits is a huge bonus. A secondary plus side is that both of our boyfriends are not huge chocolate chips fans when it comes to their baked goods, so we can pretty much devour this loaf all on our own. And yes. We realize this is hard to wrap the mind around because ALL baked goods should have chocolate chips in them. Lucky for these two, we can look past their flaws.

Double Chocolate Banana Bread








Double Chocolate Banana Bread
Equipment
- large mixing bowl
- loaf pan
- Medium mixing bowl
Ingredients
- 2 cups almond flour
- 1/2 cup cocoa powder
- 3 tablespoons coconut flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 medium ripe bananas
- 1/3 cup butter or ghee, melted and cooled
- 3 eggs
- 1/4 cup coconut brown sugar (can sub with regular brown sugar)
- 1 teaspoon vanilla
- 1/3 cup chocolate chips
Instructions
- Preheat oven to 350 °F and line a loaf pan with parchment paper and grease the inside of the pan to prevent sticking.
- In a medium bowl, combine almond flour, cocoa powder, coconut flour, baking soda, cinnamon and salt.
- In a separate bowl, mash the bananas. Add in the butter or ghee, eggs, brown sugar and vanilla and whisk until fully combined.
- Pour dry ingredients into wet ingredients and stir until just combined and then fold in chocolate chips.
- Pour batter into parchment-lined pan. Smooth the top with a spatula.
- Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean. Let cool for at least 30 minutes before removing them from the pans and serving.
