Green Chili Egg Cups

A HAPPY Friday to all our internet friends. Do you know what a silver lining is to the quarantine? Having extra time to make breakfast, or eat breakfast in general! Another thing we love here in Arizona is green chili, which are a New Mexican chili. It is a little sweet, a little smokey, and so delicious. Tamales, enchiladas, chili verde beef…. The delicious taste of green chili knows no end. We can’t get enough, and love the flavor it adds to eggs in particular. These Green Chili Egg Cups are a perfect make ahead breakfast or snack.

We hope social distancing has allowed you to try many new things, and you are able to create, relax, and get in some baking time as well. One thing we LOVE is cookies, any kind really. We are open minded women when it comes to desserts and will pretty much eat anything, but our love for cookies rises above all other desserts. We especially love Girl Scout cookies. Healthy Cookie Dough Bars

You may find yourself with a lot of extra time on your hands at home right now. It is a hard time to find the right words to say. We are so deeply saddened by everything going on, from the little things like event cancellations to the true tragedies- losing loved ones and poor health. We hope that you feel peace, comfort, and strength right now. In times of darkness, there is always light. We wanted to share one of our favorite quotes of encouragement: “Happiness can be found in the darkest of times, if one only remembers to turn on the light.”  Spend quality time with your family, give yourself grace, show love to someone who needs it, send a happy thought, vibe, prayer, kind word or whatever you may practice to someone today. Hearty Crockpot Beef and Turkey Chili

We both had moms who made home cooked meals growing up, and this was such a great treat. Our moms rotated through a few signature recipes, and in the winter and spring, a crockpot chili was a staple in the rotation. We both come from families of 5, which meant that our moms often looked for a recipe that was nutritious, hearty and easy. We wanted to create a chili crockpot recipe to bring back a little homecooked lovin’ and share it with you!

Cranberry Salted Maple Granola

There is something oddly comforting about granola to us. It is so comforting that we will on occasion buy a Costco-sized bag of granola meant to feed a family of 6 for a few weeks time, and polish it off in 32 hours. Is that braggy? Maybe. But it does convey our appreciation for this sweet and salty snack. We wanted to share the granola love with you with our homemade alternative, the ever-satisfying Cranberry Salted Maple version!

Healthy Pecan Pie Bars

Pecan pie is a fall staple, and pecans are one of our favorite nuts to bake with this time of year. Often times, we enjoy making bars because they are great for groups, especially on Friendsgiving and Thanksgiving. We wanted to create a bar that had a fall vibe while being easy to grab while we are conversing with family. Bars are also convenient, because while you cannot eat pecan pie while holding a glass of wine, you can absolutely enjoy a bar while you cradle a big glass of pinot. We got you. Nutty Paleo Granola

Want to know a secret? We rarely buy granola because we have zero self control. Zero. We start with a modest sprinkle for added crunch, then usually double that sprinkle, then generously triple it. Do we stop there? Nah. Then we have to pop a few pieces into our mouths to ‘taste test’, and are finally end up shoving it directly into our mouths by the fist-full like movie theater popcorn. No shame, guys. Suddenly, in a day or two, the entire Costco-sized bag intended for a family is gone and the sadness sits in because we are out of granola and it was supposed to last a week or two. A vicious cycle, as this happens every single time. Fair warning: this recipe is going to make you do the same, because it is so delicious.
