Paleo Strawberry Rhubarb Galette

Maybe we should begin this post by diving into what rhubarb actually is before dishing out the recipe and healthy hints… This pretty little vegetable (although legally considered to be a fruit) is a dark pink stalk, often used in pies and coupled with berries. The Stetson Chopped Salad is an Arizona staple almost as famous as the Grand Canyon. This salad combines every deliciously satisfying flavor a salad can offer with a rainbow of foods to create a perfect salad. Our friends in other states beg for it when they come visit– it’s that good. We decided to pay homage to this iconic Phoenix salad by recreating the recipe, A Healthy Hint style.

Caprese Pasta Salad

We went to Sorrento, Italy two summers ago, and I think we had some form of caprese salad every single day. When we arrived at our AirBnB, our sweet host had a basket of fresh tomatoes out for us which he had just picked from his garden. It was seriously one of the best pairings– the freshly picked basil, a creamy, thick slice of mozzarella cheese, a juicy, tomato slice and of course, a generous drizzle of balsamic.
