Paleo Strawberry Rhubarb Galette

Maybe we should begin this post by diving into what rhubarb actually is before dishing out the recipe and healthy hints… This pretty little vegetable (although legally considered to be a fruit) is a dark pink stalk, often used in pies and coupled with berries. The stems of this veggie are the only part that is edible, as the leaves actually contain poisonous toxins! We are excited to give you some inspiration as to what to do with the stalks!

If you are even a little bit in the loop in the food blog community, there is a distinct possibility you have seen the Life Changing Tahini Cookie recipe from Kale Junkie. Guys, this recipe is UNREAL. The texture is so mind blowing and fluffy, and we truly praise her for creating such an incredible baked good. While they are honestly perfect as is, we have a huge weakness for good ol’ fashion peanut butter and wanted to make this recipe our own. We played around with it a bit and found a way to combine a recipe we love with an ingredient we love!

Gluten Free Lemon Ice Cream Bars

When it comes to the dessert category, which we both consider ourselves to be professionals in, we are normally drawn to any sort of chocolatey treat. But with that being said, there are rarely any desserts we turn down. We grew up thinking lemon bars were a more sophisticated dessert that only adults enjoy. Well, now that we are “adults” we have found ourselves to really enjoy them! There is something to be said about the sour and sweet combination that hits taste buds that we didn’t even know existed. We decided to take the sophistication of a classic lemon bar and combined it with a child-like ice cream bar to create Gluten Free Lemon Ice Cream Bars. Let us tell you, these are unlike any lemon bar you have ever had!

Healthier Peanut Butter Blossoms

This little sugar nugget is essentially THE go-to Christmas cookie in our homes. There is something a little nostalgic about a peanut butter blossom, and unless you have a peanut allergy (truly, so sorry if that is you…) these are a dessert home run. Does anyone else have memories of being the designated Hersey’s kiss element to the assembly line for this cookie growing up? We sure do. This recipe does not have a key ingredient since they are just a plain ol’ delicious treat, but we did make some tweaks to ensure this recipe is slightly healthier than a traditional peanut butter blossom.
