Caprese Pasta Salad

We went to Sorrento, Italy two summers ago, and I think we had some form of caprese salad every single day. When we arrived at our AirBnB, our sweet host had a basket of fresh tomatoes out for us which he had just picked from his garden. It was seriously one of the best pairings– the freshly picked basil, a creamy, thick slice of mozzarella cheese, a juicy, tomato slice and of course, a generous drizzle of balsamic.

It also had a terrible reputation until people seemed to learn how to prepare it, starting in about 2014. Sun-Dried Tomato Turkey Burgers

Today’s recipe is essentially a scrumptious ode to our girl, Gaby Dalkin– the genius angel behind Whats Gaby Cooking. We got her cookbook a few months ago (and met her in person…. and freaked out over it). This recipe jumped out to us immediately, so we decided to give it a slight twist and make it our own. The recipe is only available in her cookbook, but you can find our version below! We made the balsamic onions she had in her book as a side as well, which offered the perfect flavor combination with the patty. Here’s a little brain teaser for you: what are two things we love deary and do everything in our power to seek? Convenience, and chipotle sauce. Seriously, we are all about convenient recipes. Paleo Chicken Tenders

Chicken nugget lovers, REJOICE. It’s no secret that we love food, and when that food is a childhood staple like a nug, we can’t help but love those, too. Did any one ever eat a Dino Chicken Nugget as a kid? The 90s moms we knew definitely had a box of these in the freezer at all times. There is something so satisfying about nuggets, but when it comes to their nutritional value, they are a little less appealing considering they are usually deep fried and made of processed ingredients. Not to worry– we are serving up a paleo chicken tender made from real ingredients while still being incredibly delicious and satisfying.
