Happy Hour starts NOW! No matter the day. That is basically the theme of Quarantine, right? We definitely are missing the days of meeting girl friends at the bar for drinks and socializing, and we REALLY miss margaritas. We think a good marg is the official drink of Arizona, and the official drink of spring. Although, to be honest, we enjoy a good margarita any time of year. This Skinny Citrus Margarita is the first alcoholic recipe we have created and are SO EXCITED to share this one with you!

White Chicken Enchilada Casserole

Many of us are avoiding groceries stores, which is a difficult thing to do when it is a big part of our routine! We both usually go to the grocery store 3 times a week, and are relying on the freezer or delivery services to really cut back on grocery runs to do our part during the COVID-19 madness. To all grocery store workers… THANK YOU. It is a sacrifice every day going into work and putting your health on the line in order to keep our kitchens stocked with food, and we cannot put into words how appreciative we are of that fact. For any front-line and essential workers that are not working from home: thank you, to all of you. You are making a huge sacrifice day in and day out, and it is recognized, seen, and appreciated beyond measure. On that note, this White Chicken Enchilada Casserole is extremely easy to make and you hopefully have all the ingredients in your fridge or cupboards already!

Green Chili Egg Cups

A HAPPY Friday to all our internet friends. Do you know what a silver lining is to the quarantine? Having extra time to make breakfast, or eat breakfast in general! Another thing we love here in Arizona is green chili, which are a New Mexican chili. It is a little sweet, a little smokey, and so delicious. Tamales, enchiladas, chili verde beef…. The delicious taste of green chili knows no end. We can’t get enough, and love the flavor it adds to eggs in particular. These Green Chili Egg Cups are a perfect make ahead breakfast or snack.

Hearty Crockpot Beef and Turkey Chili

Our moms rotated through a few signature recipes, and in the winter and spring, a crockpot chili was a staple in the rotation. Cranberry Salted Maple Granola

There is something oddly comforting about granola to us. It is so comforting that we will on occasion buy a Costco-sized bag of granola meant to feed a family of 6 for a few weeks time, and polish it off in 32 hours. Is that braggy? Maybe. But it does convey our appreciation for this sweet and salty snack. We wanted to share the granola love with you with our homemade alternative, the ever-satisfying Cranberry Salted Maple version!

Copycat Healthy Reeses Truffles

There is something you should know about us. We are completely, totally obsessed with treats. That makes it hard to be a healthy-ish food blogger, to be honest. Something else you should know: we are problem solvers. We are going to always find a way to get our dessert in. With that said, we present to you our go-to treat: Chocolate Peanut Butter Balls, or Copyat Healthy Reeses Truffles! YUM. These will take you no more than 10 minutes to make, and will be well worth it having some in your fridge when you get a sugar craving.
