Slow Cooker Chipotle Shredded Chicken

  • 2 lbs boneless, skinless chicken breasts
  • 1 small onion, chopped
  • 4 garlic cloves, minced
  • 14.5 oz canned crushed tomatoes
  • 1-3 chipotle peppers, chopped, from a can of chipotles in adobo (depending on how spicy you like it)
  • 2 tablespoons adobo sauce, from a can of chipotles in adobo
  • 1 tablespoon chili powder
  • 2 teaspoons dried oregano
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper


  • In a slow cooker, combine chicken, chopped onion, minced garlic, crushed tomatoes, chipotle peppers, adobo sauce, chili powder, oregano, onion powder, garlic powder, salt and pepper. Mix well.
  • Cover and cook on low for 5-7 hours, or until chicken is fully cooked and can easily be shredded.
  • Remove chicken from slow cooker and shred with two forks. Place shredded chicken back into slow cooker and mix in with sauce.
  • Serve immediately or keep slow cooker on warm until ready to eat. We used Siete tortillas and rolled the meat up into a little piece of heaven!
