Slow Cooker Chipotle Shredded Chicken
boneless, skinless chicken breasts
small onion, chopped
garlic cloves, minced
canned crushed tomatoes
chipotle peppers, chopped, from a can of chipotles in adobo
(depending on how spicy you like it)
adobo sauce, from a can of chipotles in adobo
In a slow cooker, combine chicken, chopped onion, minced garlic, crushed tomatoes, chipotle peppers, adobo sauce, chili powder, oregano, onion powder, garlic powder, salt and pepper. Mix well.
Cover and cook on low for 5-7 hours, or until chicken is fully cooked and can easily be shredded.
Remove chicken from slow cooker and shred with two forks. Place shredded chicken back into slow cooker and mix in with sauce.
Serve immediately or keep slow cooker on warm until ready to eat. We used
tortillas and rolled the meat up into a little piece of heaven!
