Baked Peanut Butter Banana Oatmeal

  • 2 cups rolled oats
  • 1/2 cup almond flour
  • 1/4 cup flaxseed meal
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 2 ripe bananas, mashed
  • 1/4 cup peanut butter (natural, no sugar added)
  • 2 teaspoons vanilla
  • 2 tablespoons honey
  • 1 cup egg whites (approximately 4 egg whites)
  • 3/4 cup unsweetened almond milk

Optional Toppings

  • blueberries
  • sliced bananas
  • sliced almonds
  • chopped pecans
  • melted peanut butter
  • drizzle of honey
  • whatever your heart desires!


  • Preheat oven to 350 degrees. Prepare a 8” or 9” square baking pan with non-stick cooking spray.
  • In a small bowl mix together the oats, almond flour, flaxseed meal, baking powder, sea salt and cinnamon. Set aside.
  • In a large bowl mix mashed banana and peanut butter together until combined.
  • Add in the vanilla, honey and egg whites. Mix well. Add the almond milk and stir until everything is fully combined.
  • Add dry ingredients to wet ingredients and mix thoroughly.Pour the mixture into prepared baking pan.
  • Bake at 350 degrees for 30-35 minutes. Or until golden brown.
