Paleo Peanut Butter Chocolate Chip Blondies

  • 2 eggs
  • 2/3 cup coconut sugar
  • 1/2 cup + 2 tablespoons nut butter, crunchy or smooth (We recommend NuttZo Peanut Pro)
  • 1/4 cup coconut oil, softened
  • 2 teaspoons vanilla
  • 1 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips (we love Lily’s)


  • Preheat oven to 350 degrees F. Line an 8x8 inch baking pan with parchment paper or spray with nonstick cooking spray to prevent sticking. Set aside.
  • In a large bowl, mix together the eggs, coconut sugar, ½ cup of nut butter, coconut oil and vanilla until smooth.
  • Next add the almond flour, coconut flour, baking soda and salt. Mix until a cookie dough consistency forms, then fold in the chocolate chips.
  • Add the batter to the prepared pan and spread evenly. Dollop remaining (2 tablespoons) nut butter over dough. Feel free to spread it a little so it’s a more evenly dispersed. 
  • Bake for 22-27 minutes until edges are just slightly golden.
